What’s for Dinner?

Since it is Wednesday, here is what is for dinner:

Garlic quinoa, roasted butternut squash and sweet potatoes, and pulled pork loin. 

Just proof that pork loin can be pulled. I use about a cup of broth, cumin, adobo, garlic and put it in my Power Cooker XL (far less expensive than that pot everyone is talking about and works fabulous) for 40 minutes. Voila!  Pulled pork loin.

  1. Oh, that looks sooo good! We were supposed to have Cracker Barrel with family tonight, but Bruce had a low sugar (36!) at noon, and everything was just so far off for the rest of the day that by the time it was all said and done, we ended up with Popeye’s.
